Mary Berry’s Tarte Tatin – French Foods to Try

As we’ve mentioned before, French food is one of the delights that keep people coming back to the country, time after time. Fresh ingredients can be found in abundance at markets throughout the region and with the fully-stocked kitchens in our Provence villas at Affinity Holidays France, you’ll have more than ample opportunity to try your hand at some of the tastiest local recipes. Tarte Tatin, the French traditional apple pie, is one of our tried and tasted favourites. Why not have a look at this recipe and have a go at baking one yourself?

Serves : 8 


  • 3 tbsp sugar
  • 1 tsp water
  • 4 large apples peeled and quartered
  • 2 tbsp dark brown soft sugar
  • 75g salted butter, diced
  • 1 shortcrust pastry sheet


  1. Preheat the oven to 180 C / Gas 4.
  2. For the caramel: pour the sugar and water into a heatproof pie tin. Heat for a few minutes on the cooker ring until it starts to brown and caramelise. Swirl the caramel around the tin.
  3. Arrange 2 layers of apples in a circle on top of the caramel. Sprinkle with dark brown sugar. Dot with small cubes of butter. Cover with shortcrust pastry making sure the edges are tucked into the side of the tin.
  4. Bake in the oven for 30 minutes.
  5. Turn out onto a serving plate and serve hot with ice cream.
